Heavily influenced by the Shirazi methods of my mother-in-law's kitchen, the recipes require precise execution and an uncompromising approach to layering flavors. Saffron, rosewater, dried limes (līmū amānī), and complex botanical roux are utilized to create the definitive heirloom centerpieces of the Persian vegetarian table.
